I am a big fan of slow roasting meats and fishes and I have always been curious about low and slow BBQ which is an Australian take on the concept of slow roasting and cooking meats and fishes that are placed on a hot coal BBQ.

I decided to put this new form of BBQ to the test and was lucky enough to meet up with one of the top pit masters in Sydney who has kindly shared some of his secrets in this blog.
